After Niall O'Brien's 126 helped Ireland post a record 589-7 declared, UAE replied with a spirited 360.
Rather than enforce the follow on after 137.1 overs of fielding, Ireland batted again and ended proceedings on 188-3.
The result meant that Ireland finished with six valuable points to extend their lead at the top of the table.
* New Leicestershire CCC signing Joe Burns was again in battling form for Queensland. After the first day of their final Sheffield Shield game at Western Australia was lost to weather, the teams made up for lost time.
WA inserted Queensland, who were dismissed for 164 at the WACA. Burns made a century in the last round of matches and second top-scored in Perth with 25 from 65 balls.
Western Australia closed on 141-5 in reply with the ever-consistent Mike Hussey unbeaten on 48 at stumps.
